Elder Flower Syrup
Along with spring comes the bloom of Elder flowers, and with the warmth of the morning inviting you for a walk, it is the perfect excuse to pick some of them in the adjacent area of the magnificent Sintra mountain range.
The Elder Tree is a species native to Europe and, to our good fortune, is very easily found in several areas of Sintra where there are water courses. In our village the bushes and trees grow without the intervention of man, since most people do not know the properties of the Elder flowers or berries.
With a mild and fruity flavor, the ivory-colored syrup is great by itself diluted in water, but can also be used to mix with sparkling water, to make a delicious and refreshing lemonade or even to make a creamy ice cream. In addition to the fantastic taste, Elder flowers have anti-inflammatory properties.

- 10 heads of elderflower
- 1kg of sugar
- 1,200 liters of water
- 2 lemons
The first step is to pick some of the flowers by cutting with a scissor the stem at the base of the corymb. This is because only the elderberry flowers and berries are safe for consumption. You should only cut the corymbs where all the flowers have bloomed. It is also important to collect flowers from various shrubs, in order to ensure the continuity of the species in that place and the various insects, such as bees.
The next step, when you get home, is to wash and gently separate the flowers.
Then, in a saucepan, add the sugar and water and boil until the sugar is dissolved.
In a large bowl of glass, place the flowers and the lemon slices. Then cover the flowers with the syrup and mix well.
Cover the bowl and let stand in a cool place away from sunlight for three days and make sure to mix it every day.
At the end of this period, drain the syrup through a cotton kitchen cloth into a pot and boil it.
Then distribute it through several previously boiled jars in order to keep it hermetically sealed. In this way it is possible to store the syrup for several months.
In the end, nothing better than celebrating the arrival of those hot nights with a delicious and cool Elder flower drink.
